Description
Sodium nitrite (NaNO2) is a white to slightly yellowish crystalline compound widely used in various industries, including food preservation, chemical manufacturing, and pharmaceuticals. It acts as a potent antioxidant and antimicrobial agent, inhibiting bacterial growth and preserving the color of processed meats. However, its use is controversial due to potential health risks, particularly its role in the formation of carcinogenic nitrosamines.
